About Me

My name is Amy and I love to eat!  I haven’t always made the best food choices, but who has?   Like many people, I put on the Freshmen 15.  More like Freshmen 30 by the time I graduated college.   I wasn’t working out like I did in high school and I was eating fast food and ramen noodles all the time because I didn’t know how to cook.

When I got accepted into nursing school in 2009, I was at my all time high weight of 205lbs.  I made a decision then to start getting healthy, not only for myself, but how could I educate my patients to live a healthy lifestyle if I wasn’t setting the example?.  I started working out, learned how to cook a few simple meals, and lost over 30 pounds and have managed to keep most of it off.   However, I have noticed myself slipping back into some old habits, minus eating the ramen noodles, because that just isn’t real food!

Several of my friends keep asking me either to give them my recipes or to write a cookbook from all of the pictures I post on Facebook.   Which is how this blog came about!  I want to share with you what I eat.  This will mostly be about food, delicious healthier food and indulgent treats (hey, a girl has to have her chocolate)!  There may also be posts about fun workouts or random awesomeness that goes on in our lives.

I draw a lot of my inspiration from several amazing Paleo authors.   I think that you will enjoy accompanying me on my journey of going through their cookbooks and using their inspiration to create your own recipes.

Hopefully this blog will inspire you to be able to make some of the tasty food that I feed myself and my boyfriend.
